Hi everyone, this is my chicken curry pie made at home. I used all our left-over curry to turn it into my favourite pie- curry pie! I know that technically, since I'm Aussie, my favourite pie is supposed to be meat pie, but this is much more gourmet and delicious. the curry filling can be any curry that you know you love, in this case it was green chicken curry. The pastry was a rough puff pastry. Here's the recipe:
ingredients
1 1/4 cup of flour
pinch of salt
1/4 tsp cream of tarter or 1tsp lemon juice
160g butter
4 1/2 tbs cold water
method
SET OVEN TO 230 degrees Celsius or 450 Farenheit.
1. sift flour, salt, and cream of tarter if using into a bowl.
2. Cut butter into flour, keeping it covered in flour while cutting the butter into the size of walnuts. Do not rub the butter in.
3. Mix to a dough with the water and lemon juice, if using, with a knife.
4. Turn onto a lightly floured board and roll into an oblong shape with a lightly floured rolling pin.
5. Roll and fold.
6. Seal the open edges with the rolling pin, and keep rolling until the butter is evenly spread through the dough.
Notes: store refrigerated until needed.
should work up to approx. 500 grams.
Roll out pastry until thin.Cut out pie tops first, then roll out rest of pastry to line the tins. Place pie-lining in tins, then fill with curry. place on top pie lids. place pies in oven for 10 minutes, then reduce heat to 350F or 180C and cook for 20 minutes.
