Poppyseed cake with lemon icing

:) a tradiotional in my family. Mum starting making this while I was blogging. INSTANT UPLOAD!!!!!




185g butter, chopped
1 cup castor sugar
3 eggs
2 cups self raising flour
3/4 cup milk
1/3 cup poppy seeds

Grease cake tin, cover base with baking paper (cut a circle rather than crumbing it up at the bottom delivers a smooth presentation) and preheat oven to moderate heat
Combine butter, sugar, eggs flour and milk in medium bowl of electric mixer, beat on low speed until ingredients are combined. Then, beat on medium speed until mixture is smooth and changed in colour (Mixture might appear to be curdled at this stage, but will reconstitute later).
Stir in seeds. Pour mixture in tin. Bake in oven for about one hour. Stand five minutes before turning onto a wire rack to cool. Top cake with frosting if desire.
